RECIPE: Summer Rolls by Madeleine Shaw

Following Newbie on Tours visit to Parsons Green with Madeleine Shaw, we wanted to share Madeleine’s yummy Summer Rolls recipe below!


Pepper & Mango Rolls:

  • 1/4 mango thinly sliced
  • 1/4 red pepper thinly sliced
  • 1/4 cucumber thinly sliced
  • 1 spring onion chopped
  • optional - A handful of Roasted Peanuts

Prawn Avo Mango Rolls:

  • 12 pre-cooked prawns
  • 1/4 mango
  • 1/4 an avocado
  • 1/4 cucumber thinly sliced
  • mint leaves

Dipping Sauce:

  • 1 tbsp tamari
  • 3tbsp of sesame oil
  • 1tbsp maple syrup
  • 1 clove of garlic finely chopped        
  • 1 inch of ginger grated
  • Juice of 1 lime


  1. Prepare your veggies and fruit by chopping into thin matchsticks (also the perfect treat to keep the little ones entertained!)
  2. Soak a sheet of rice paper in warm water for a few seconds (do not oversoak or the paper will rip) then lay the rice paper on a chopping board
  3. Place your fillings in the middle of the rice paper, fold the rice paper over the fillings, then tuck the sides into the middle and finish rolling up
  4. Cut in half and serve with your yummy dipping sauce!
