Summer Picnic Recipes

Sunny British Summer days mean lots of picnics! Do you have a picnic planned with your little ones? You might be wondering, “what should I bring to a picnic with kids?” or “What is the best kids picnic food?”

This week we’re sharing our favourite Swedish inspired picnic recipes served either hot or cold.

1. Swedish Pancakes

Ingredients:
8 tablespoons of unsalted butter
1 ¾ cups whole milk
3 large eggs
½ teaspoon vanilla extract
¼ teaspoon salt

 

Method:
Melt the butter then combine the flour, milk, eggs, melted butter, vanilla and salt in a big bowl until smooth. 
Heat a large frying pan with some vegetable oil or butter to coat the bottom of the pan.
For each pancake simply pour out ¼ cup batter into the pan on medium hear and wait for 1 minute per side (or until golden brown).

 

Filling ideas:
For sweet, we recommend cutting up bananas and berries then dusting with icing sugar before rolling up the pancake. For something savoury why pair cooked tomatoes and mushrooms with ham and cheese?

 

2. Mini Swedish Meatballs (hot or cold)

Ingredients:
2 tablespoons olive oil
1 small onion
500g pork mince
1 egg yolk
1 tablespoon plain flour
1 tablespoon mustard
salt and pepper

 

Method:
Finely chop up the onion and lightly fry in pan. Then place the mince in a large mixing bowl, add the cooked onion, egg yolk, flour and mustard and mix all of the ingredients together in a large mixing bowl.
Heat the oven up 180 degrees. Roll each meatball into a small ball then place onto a large baking tray and bake for 18 – 20 minutes. Check there is no pink in the centre before taking out of the oven. 
Serve on a stick for easy dipping with tomato sauce, cranberry sauce or creamy gravy.
